If you saw our post on how to make a fully loaded freak shake then you will already know that we are big fans of Bakes Box. The lovely ladies at Bakes Box contacted us after seeing the Freak Shake post and very kindly offered to send us a 3 month subscription of their bakes kits. We both love baking so were very excited to receive the first kit which contained all the dry ingredients needed to make the magical unicorn cupcakes. Bakes Box collaborated with the very talented Lady Berry Cupcakes for the most recent box and we are looking forward to seeing what the next one will bring!
Magical Unicorn Cupcakes
For the cupcakes
85g self-raising flour
85g caster sugar
1/4 TSP baking powder
1/2 TSP vanilla extract
2 medium eggs
For the icing
175g icing sugar
1/4 TSP vanilla extract
2 TBSP milk
500g fondant icing
Pink, blue, yellow, beige and black food colouring
Preheat the over to 180°C and line a cupcake tin with the 6 cupcake cases.
Mix together the flour, sugar, eggs, butter, baking powder and vanilla essence.
Add the mixture to the cupcake cases.
Bake for 20-25 mins.
To make the butter cream beat the butter, vanilla extract, milk and icing sugar in a bowl until smooth.
Once the cupcakes are cool apply a layer of butter cream over the top.
Roll out your fondant icing and cut out discs using a cutter or glass the size of the cupcakes. Place the discs over the butter cream.
divide the rest of fondant into 6 balls and colour them using the various food colouring.
To create the nose you will need to roll out the grey fondant and cut a disc using the cutter you used earlier , once you have your circle you will need to cut again just under middle point to create a moon shape.
Place the grey fondant on the lower part of the cupcake and create nostrils using an end of a paint brush or craft tool if you own them.
Using the beige fondant divide into 6 and roll into a cone shape (sadly mine look more like carrots!) Once you have your shape score the fondant all the way around.
Create a dip where you want the horn to stand and add a little water to help it stick in to place.
Next you will want to create the ears by cutting out 2 triangles and attaching either side of the horn – make sure you leave enough room for the hair.
Take the coloured balls of fondant and roll into thin strands to attach around the horn and between the ears.
Last but not least use the edible pink shimmer to create some rosy cheeks. I added some shimmer to the horn too to try to make it look less carroty.
